Lemon Balm Popsicles
We were having summer weather here back in April, so Jon and I have been enjoying popsicles for quite awhile now. They are such a refreshing summer treat and we love making them with herbal teas, herb-infused honeys, and our favorite fruits and fruit juices. One of our favorites the past few weeks has been this lemon balm popsicle recipe. It is delightfully fresh, a bit citrusy, and just the right amount of uplifting and sweet.
Ingredients
2 cups of strong lemon balm tea (infused covered for 20 minutes)
1/4 to 1/3 cup of raw honey
the juice of half a lemon
optional mix-ins: sliced kiwi or strawberries to add some visual interest
How to Make the Popsicles
The first thing you will need to do is brew your tea. The longer you allow it to brew, covered, the stronger it will be. Once you have strained your tea, stir in your raw honey until it is thoroughly incorporated, then mix in your lemon juice.
Fruit slices can be added to your popsicle mold first so your popsicle mix will fill in all the nooks and crannies around them and make everything pretty. Pour your mix into your mold, then stick your molds in the freezer for several hours. I use these stainless steel molds. *(Amazon affiliate link.) If you use stainless steel molds, you can run them under warm water for a couple seconds after taking them out of the freezer to release the popsicle from the mold.
